Got a Pastrami in the egg smoking away, trying the cheat code by using a store bought corned beef and then after soaking it awhile adding the proper spices. How bad could it be???

 

@TiScape been window shopping because I am bored and happend on some brand new Proto concept CO.1 blades, ain't no beveled leading edge on them...cheap too, well cheaper than miura's

And they have a ceramic insert hidden inside to add some forgivness! Absolutely gorgeous irons 

 

*also putting a brisket in the Traeger tonight b4 going to bed. Son coming for dinner tomorrow and he asked for it

I assume it’s just something that comes with advancing to an age where more of your life is behind you than ahead of you. 
 

This becomes an unavoidable fact to contend with. And until you reach that point, you may never have truly understood what it means, I didn’t

I don’t know how philosophers…existentialists, nihilists, could live their whole lives constantly immersed in such thought.
 

The key is to just feel and tap into the joie de vivre, the more instinctual feelings as opposed to intellectual, “one day at a time” as they say an let yourself just find pleasure in the simple things..,

Such a great post. I've been wondering about things like this a bit lately but I'm still young enough to keep the thoughts at bay (mostly). Why rush the epiphany? 😂

 

In the mean time I'm chasing that happiness all the same. I found some today in Spokane at the Purgatory whiskey bar. Good god!

My brisket came out great. (Didn’t get any pics) Went with a slightly different technique. Kept it at 220° for the entire smoke. Also made my own beef tallow from the trimmings. Poured smoked tallow over the brisket before wrapping in butcher paper. Delicious! 🤤 

You just never know how a brisket will turn out. Sucks when you spend 14+ hours on one and it isn’t great.
